Apple Muffins

Fun Kitchen

The ‘King of Cooking Apples’ is celebrated this month with the national Bramley Apple Week which was last week. The English apple is a favourite orchard fruit, but did you know there are over 2,300 varieties of dessert and cooking apples? So here is a little tasty treat for everyone to enjoy in this February half term...

Apple Muffins by Fun Kitchen

200g self-raising flour, sifted

2 tsp cinnamon

50g caster sugar

1/2 apple, peeled and grated/chopped (keep the peel)

2 tbsp vegetable oil

200ml milk

1 egg, beaten

1. Pre-heat your oven to 200C gas mark 6.

2. Place cake cases inside muffin tins.

3. Mix oil, milk and egg in a small bowl.

4. Combine dry ingredients in a bowl, stir in apple and wet ingredients. Do not over-stir.

5. Place the mix in the cases (and you can poke lots of apple peel circles in the top, sticking out like rose petals)

6. Bake for 20 minutes or until muffins are golden brown.
